Stovetop Barbecue Pulled Chicken Recipe

– 4 boneless, skinless chicken breasts – 1 cup barbecue sauce – 1/2 cup chicken broth – 1 medium onion, chopped – 2 cloves garlic, minced – 1 tbsp olive oil – Salt and pepper to taste

Ingredients

Heat olive oil in a large skillet over medium heat. Add chopped onion and garlic, sautéing until softened, about 2-3 minutes. Season with salt and pepper.

Instructions

Add chicken breasts to the skillet and cook for 6-7 minutes per side until golden brown. Remove chicken and set aside.

In the same skillet, pour in chicken broth and scrape up any browned bits from the bottom. Add barbecue sauce and stir to combine.

Return chicken breasts to the skillet. Cover and cook on low for 25-30 minutes, occasionally stirring the sauce to prevent burning.

Once chicken is cooked through and tender, remove breasts from skillet. Shred chicken using two forks, discarding any fat.

Return shredded chicken to the skillet, mixing it with the barbecue sauce. Let it simmer on low for an additional 5-10 minutes to absorb flavors.
