Grilled Chicken Caprese Sandwich

– 2 boneless, skinless chicken breasts – 4 slices of fresh mozzarella – 2 tomatoes, sliced – Fresh basil leaves – 4 tablespoons balsamic glaze – 2 ciabatta rolls – Olive oil for grilling

Ingredients

Preheat grill or pan to medium-high heat. Season chicken breasts with olive oil, salt, and pepper.

Instructions

Grill the chicken for 5-7 minutes on each side until fully cooked, reaching 165°F internally.

While grilling, slice the tomatoes and fresh mozzarella. Set aside basil leaves.

Toast the ciabatta rolls lightly on the grill for 1-2 minutes, just until golden brown.

Once the chicken is done, place a slice of mozzarella on top of each chicken breast and cover to melt.

Assemble the sandwich by layering chicken with mozzarella, tomatoes, basil, and a drizzle of balsamic glaze.
