Tortellini Salad Recipe

Ingredients:

– 1 lb cheese tortellini – 1 cup cherry tomatoes, halved – 1 cucumber, diced – ½ cup sliced black olives – ¼ cup red onion, thinly sliced – 1 cup mozzarella balls or cubes – ½ cup Italian dressing – Salt & pepper to taste

Boil cheese tortellini according to package directions. Drain and rinse under cold water to stop the cooking and cool quickly.

Halve cherry tomatoes, dice cucumbers, slice red onion thinly, and drain olives. Cut mozzarella into bite-sized pieces.

In a large bowl, add tortellini, veggies, olives, and mozzarella. Toss gently to mix while keeping ingredients intact.

Pour in Italian dressing and toss again to coat evenly. Season with salt and pepper to taste. Chill for 30 minutes if time allows.
